1 Cup Almond Flour
1 Tsp Baking Powder
1/2 Tsp Pink Salt
1 Cup Xylitol
3 Eggs
2 Egg Whites
1/4 Cup Melted Butter
4 Oz Cream Cheese
1 Tsp Vanilla Extract
1/4 Cup Strawberries
1/4 Cup Blackberries
1/4 Cup Mango

Instructions
Step 1) Preheat oven to 375 F
Step 2) Combine flour, salt, powder and 1/2 Cup Xylitol in a bowl
Step 3) Combine Eggs, Egg whites and remaining xylitol in a bowl
Step 4) Slowly add the dry ingredients to the wet, mixing as you go
Step 5) Place parchment paper on a sheet and spray with coconut oil
Step 6) Pour the mixture on a baking tray and bake for 8 minutes then cool for 10 minutes
Step 7) Combine cream cheese, butter and vanilla extract in a bowl
Step 8) Cover your bamboo roller in saran wrap then place the cake on top
Step 9) Evenly spread the cream cheese mixture on the cake
Step 10) Place the strawberry and mango slices on the mixture then roll the cake
Step 11) Tightly roll the ends of the cake then refrigerate for 15 Minutes
Step 12) After 15 Minutes have elapsed remove the roll from the fridge and evenly cut the roll into pieces
