STRAWBERRY pound cake

Ingredients


 1 Cup of Almond Flour
1/2 Cup of Unsalted Softened Butter
4 eggs
1 tsp of Vanilla Extract
1/4 tsp of Salt
8 oz of Cream Cheese
3/4 tsp of Baking Powder
1 Cup of Strawberries



Instructions


Step 1) Preheat the oven to 350 F

Step 2) In a mixing bowl combine the butter and 4 oz of cream cheese

Step 3) Using a mixer, cream the above ingredients together until smooth

Step 4) Add the eggs and vanilla extract then blend until a smooth consistency is reached

Step 5) In a separate bowl, mix together the almond flour, baking powder and salt

Step 6) Slowly add the dry ingredients to the wet ingredients, mixing as you go

Step 7) Mix the ingredients until no chunks are visible

Step 8) Bake the pan in the oven for roughly 45 minutes or until it passes the "toothpick test"

Step 9) In a blender combine the remaining 4 oz of cream cheese and strawberries

Step 10) Blend them together until a relatively smooth texture is achieved

Step 11) After the cake has finished baking remove it from the oven and allow it to cool for 5-10 minutes

Step 12) After 10 minutes have elapsed, spread the strawberry mixture on top of the cake

Step 13) Refrigerate the cake for 3-4 hours to allow the icing to set
