BLUEBERRY pound cake

Ingredients


 1 Cup of Almond Flour
1/4 Cup of Unsalted Softened Butter
4 eggs
1 tsp of Vanilla Extract
1/4 tsp of Salt
8 oz of Cream Cheese
3/4 tsp of Baking Powder
1 Cup of Blueberries



Instructions


Step 1) Preheat the oven to 350 F

Step 2) In a mixing bowl combine the butter and 4 oz of cream cheese

Step 3) Using a mixer, cream the above ingredients together until smooth

Step 4) Add the eggs and vanilla extract then blend until a smooth consistency is reached

Step 5) In a separate bowl, mix together the almond flour, baking powder and salt

Step 6) Slowly add the wet ingredients to the dry ingredients, mixing as you go

Step 7) Mix the ingredients until no chunks are visible

Step 8) Bake the pan in the oven for roughly 1 hour or until a smooth center is achieved

Step 9) In a blender combine the remaining 4 oz of cream cheese and blueberries

Step 10) Blend them together until a relatively thick texture is achieved

Step 11) After the cake has finished baking remove it from the oven and allow it to cool for 5-10 minutes

Step 12) After 10 minutes have elapsed, spread the blueberry mixture on top of the cake

Step 13) Refrigerate the cake for 24 hours to allow the icing on top to solidify or enjoy as is!
