Ingredients
1 Cup of Almond Flour
1/4 Cup Golden Flaxseed Meal
1/2 Tsp Baking Powder
1/4 Cup of Coconut Oil
1/4 Cup of Strawberries
1/4 Cup Salted Butter, melted
1/4 Cup Heavy Cream
4 Oz of Cream Cheese
2 Eggs
2 Tsp Vanilla Extract
1/4 Cup Golden Flaxseed Meal
1/2 Tsp Baking Powder
1/4 Cup of Coconut Oil
1/4 Cup of Strawberries
1/4 Cup Salted Butter, melted
1/4 Cup Heavy Cream
4 Oz of Cream Cheese
2 Eggs
2 Tsp Vanilla Extract
Instructions
Step 1) Pre-heat the oven to 375 F
Step 2) In a large bowl combine the almond flour and flaxseed meal
Step 3) In a medium bowl mix together the melted butter, egg, heavy cream, coconut oil and 1 tsp of vanilla extract
Step 4) Carefully add the liquid mixture to the solid mixture in small amounts, whisking as you go
Step 5) Mix all the ingredients together until no lumps are visible
Step 6) Pour the mixture evenly into each cupcake mold
Step 7) Using a blender, blend the strawberries together for a few seconds until no chunks are visible
Step 8) In a secondary bowl, separate the egg whites from the yolk then add the yolk to the blender
Step 9) Add the cream cheese and 1 tsp of vanilla extract to the blender
Step 10) Blend for 10-15 seconds until a smooth consistency is reached
Step 11) Add roughly 1 Tbsp of the strawberry cream mixture on top of the muffin mixture
Step 12) Using a toothpick, mix the strawberry mixture with the muffin mixture
Step 13) Bake for 18-20 minutes depending upon the browning you desire
Step 14) Allow them to cool for 5 minutes then enjoy!
